Gone are the days where these little guys were just relegated to the top of terra cotta pets. With chia seeds popping up everywhere now a days, here is a simple recipe for incorporating them into your diet.

When soaked in liquid the seeds swell and get all gelatinous like, creating a pudding of sorts. Any liquid you prefer will work like milk, coconut water, almond milk, etc. Just keep the ratio to about 3 tablespoons seeds to 1 cup liquid and soak in the fridge for at least 4 hours or overnight. For extra protein, I like to add it to my greek yogurt and top with fruit.

Chia pudding and greek yogurt cups

3 tbsp chia seeds soaked in 1 cup water overnight

5 oz greek yogurt ( I lOVE Chobani Hint of Flavor brand, its low in sugar)

fresh fruit, I used strawberries and blueberries here

Frozen fruit, I used raspberries, blueberries and black berries

Coconut chips

1. Layer chia pudding in bottom of cup

2. Top with a layer of fresh fruit

3. Top with greek yogurt, coconut chips and frozen fruit
